The fame that precedes the legendary brand already helps us get an idea of ​​the quality of the knife, but it is when we have it in our hands when it is proven.

We are going to focus on Chef Seki Magoroku’s knife of 28’0 centimeters. A light knife, with an extremely sharp non-stick blade allows us to cut any piece with a gentle wrist movement, without making too much pressure and without breaking the fruit or vegetable. The western edge on both sides of the blade has two types of steel of maximum hardness (VG-Max hardness HCR = 61 for the inner core and steel SUS420J2 for the exterior satin) combined with a copper solution that remains visible. The handle is made of Pakka wood.

For any chef’s knife to be kept in good condition it is very important to clean it by hand, with a sponge and mild soap, as the dishwasher can damage the edge. The same happens when you put it away: never in a drawer where it can be hit or even cut us, always in its case or block of knives.
